Elasticsearch doesn't provide helm charts for their newer releases anymore as they recommend using their elasticsearch operator (https://www.elastic.co/elastic-cloud-kubernetes) instead (which works really nicely).

I'd recommend we do the following:

• remove the elasticsearch & kibana charts as dependencies from https://github.com/secureCodeBox/secureCodeBox/blob/main/hooks/persistence-elastic/Chart.yaml
• provide basic install instructions / links to the elasticsearch operator docs that can be used to setup hook and a basic elasticsearch stack.
