docs: remove prototype/disclaimer framing from README - #490

The project has matured beyond its initial prototype stage. Remove the 'work in progress and not ready for production use' disclaimer and 'prototype project' label to better reflect the current state and support the CNCF Sandbox application process. The project has matured significantly since initial development. This framing is inaccurate and actively harms the project's perception — particularly relevant as we prepare the CNCF Sandbox application (tracked in #448).
