Update GitHub Actions workflows to run Apple Silicon macOS jobs on macos-26 (Tahoe)
GitHub runner images have moved forward, and we want CI coverage aligned with macOS 26 for Apple Silicon jobs while retaining Intel-specific coverage where explicitly configured.
Has this already been discussed elsewhere?
This is a minor feature, which does not need previous discussion elsewhere
The hosted runner lost communication with the server. Anything in your workflow that terminates the runner process, starves it for CPU/Memory, or blocks its network access can cause this error.

I got this random failure on the macos-26-intel runner in yet another my pr:
https://github.com/python/cpython/actions/runs/23925826738/attempts/1
It says:
I would say, it's a frequent issue. Here is another example:
https://github.com/python/cpython/actions/runs/23924238843
(in a different random place and so on)
I got same errors recently in the python-gmp project and I don't know other workarounds than switching back to the macos-15-intel runner.

Done for main: #153194.
Let's give that a little while in main to check it's stable before backporting.
